2 cups cooked brown rice or barley
3 cloves garlic, minced ½ red onion, cut in small dice 1 tablespoon olive oil 1 pound ground turkey Salt and pepper, to taste 1 large can low-sodium chicken broth 1 can white beans (Great Northern or cannellini) ½ teaspoon red-pepper flakes ½ teaspoon ground thyme 1 head kale, roughly chopped
Cook rice or barley according to package directions. In a separate soup pot, saute garlic and onion in olive oil. Add ground turkey, season with salt and pepper and brown.
Add chicken broth, beans, cooked rice or barley, red-pepper flakes and thyme and bring to a simmer. Add chopped kale, cover and simmer 5 minutes. Serves 6 to 8.
